Green Chilli Chutney Chicken

Ingredients:
- 500g boneless chicken (breast or thighs), cut into bite-sized pieces
- 1 jar (300 ml) Green Chilli Chutney
- 2 tablespoons oil
- 1 onion, finely sliced
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/2 cup yogurt (optional, to balance spice)
- Fresh coriander leaves, for garnish
- Salt to taste
- Steamed rice or paratha, for serving
Instructions:
1. Marinate the chicken: In a bowl, marinate the chicken with salt and a few spoonfuls of the Green Chilli Chutney. Let it sit for about 15-20 minutes.
2. Cook the aromatics: Heat oil in a large skillet over medium heat. Add the sliced onions and sauté until golden brown. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
3. Cook the chicken: Add the marinated chicken to the skillet and cook until it’s browned on all sides, about 5-7 minutes.
4. Add the chutney: Pour in the remaining Green Chilli Chutney and stir to coat the chicken. If desired, add yogurt to balance the spice level and create a creamy texture. Let it simmer for 10-15 minutes, allowing the flavors to meld.
5. Serve: Garnish with fresh coriander leaves. Serve hot with steamed rice or paratha.
Tips:
- To add more flavor, include a few sliced green chilies if you like extra heat.
- Vegetables like bell peppers can add color and flavor to the dish.
